Imagine this scenario - it's hot out, you don't feel like firing up the stove, and you've got a hungry family or some hungry friends. What to do? The answer is simple - make these delicious, but healthful, wraps. Thinly sliced deli roast beef combines with fresh lettuce, carrots and mint and a zingy, almost spicy, sauce, to make a fast snack or a meal. Fresh garlic and ginger combine with lime juice and dark toasted sesame oil to make your mouth happy when in combination with all the other ingredients. If you want to make these as a snack, use the small fajita-sized tortilla shells instead of the shells listed in the recipe. This recipe is low in refined sugars and can be made gluten-free by substituting fish sauce for reduced sodium tamari and by using your favorite gluten-free tortilla shells.

- 1 1/2 tbsp. freshly squeezed lime juice
- 1 tbsp. dark toasted sesame oil
- 1 tbsp. freshly grated ginger
- 1 tbsp. finely minced garlic
- 2 tsp. fish sauce (or reduced sodium tamari)
- 3/4 tsp. sugar (or one packet Truvia)
- 2 cups torn Boston lettuce
- 12 oz. thinly sliced deli roast beef
- 1/2 cup matchstick-cut carrots
- 1/4 cup freshly chopped mint
- 4 (8-inch) flour tortilla shells

Combine the first six ingredients in a small bowl, whisking well. Place the tortillas on a work surface. Brush each shell lightly with 2 tsp. of the sauce.
Arrange 1/2 cup lettuce on each shell. Top with around 3 oz. of the roast beef.
Combine the carrots and the mint. Arrange about 3 tbsp. of the carrot mixture over each serving. Drizzle 1 tbsp. of the sauce over the top of each. Roll them up, slice them on the bias, and serve immediately. Two good sides to serve are plain rice crackers and sautéed zucchini.
