Yields: 2 servings
- 2 chicken breasts
- 4 tbsp. goat cheese
- 1 cup cooked and drained spinach
- 1 cup bread crumbs
- Dijon mustard
- salt and pepper
Preheat oven to 350 degrees.
Cut a slit in the chicken breasts.
Combine the goat cheese and spinach along with salt and pepper to taste.
Stuff goat cheese filling into chicken breast.
Lightly coat chicken breast with dijon mustard and roll in bread crumbs.
Put chicken breasts in a non stick pan brushed with olive oil until crust is golden brown.
Put chicken breasts in an oven safe casserole dish and cook in oven for 20-25 minutes or until 155 degrees internal temperature
