Spaghetti with Lemon

If you don't have much in the house, but happen to have dried pasta, olive oil, lemon and garlic on hand, you've officially got a quick and tasty meal. This is a very simple recipe and can easily be made gluten-free. Serve with a green salad and some bread for a full meal.


  • 12 oz. dried spaghetti (can use gluten-free pasta)
  • Juice of 1 large lemon
  • 2 garlic cloves, cut into very thin slivers
  • 6 tbsp. extra virgin olive oil
  • Kosher salt
  • Freshly ground black pepper


Cook the pasta in a pot of boiling, salted water according to the package directions. Drain well, then return to the pot.

Pour the olive oil and lemon juice over the cooked pasta, sprinkle in the slivers of garlic and add seasoning to taste. Toss the pasta over a medium to high heat for 1 - 2 minutes. Serve immediately in warmed bowls with sides of your choice.
