Snow Pea, Scallion and Radish Salad

Simple salads don't always turn out very well, but using some good, tasty vegetables and a ridiculously simple dressing creates a salad that you can make as a side for just about any meal or even as a healthy snack. This particular salad would be quite good served with an Asian-themed meal, but it can easily fit in with just about any dinner. If you don't have canola oil on hand, you may certainly use a different neutral oil or you can substitute with extra virgin olive oil.


  • 2 cups (8 oz.) snow peas, trimmed
  • 1 tbsp. water
  • 2 scallions, sliced thinly
  • 4 radishes, trimmed and cut in thin strips (about 1/2 cup)
  • 1/4 cup rice vinegar
  • 2 tsp. sugar
  • 1 tbsp. canola oil


Put the snow peas in a microwave-safe bowl with the water. Cover tightly and microwave for 1 minute. Drain and let cool. Cut the snow peas on the diagonal into 1/2" diamond shapes, discarding the end pieces.

In a medium serving bowl, combine the snow peas, scallions and radishes. In a small bowl, whisk together the rice vinegar, sugar and oil until the sugar dissolves. Pour over the salad, toss gently, and serve immediately.

NOTE: I did not care much for the dressing included in this recipe after conducting a taste test. I made a lemon vinaigrette that complemented the salad much better.
