Traditional shrimp cocktail usually features plain, boiled shrimp served with a boring, prefabricated cocktail sauce. This recipe kicks things up a notch and with just a few simple ingredients, boring is transformed into amazing. Do yourself a favor and make your own cocktail sauce - the results will be far better than any bottled stuff from the grocery store.

- 1 lb. large shrimp (16/20 count), peeled and deveined
- 1/2 - 1 tbsp. extra virgin olive oil
- 1/2 tsp. kosher salt
- 1/2 tsp. freshly ground black pepper
Directions[]
Preheat the oven to 400 degrees.
Place the shrimp on a large sheet pan. Drizzle the olive oil over the shrimp, then sprinkle with salt and pepper. Use your hands to toss the shrimp and coat everything thoroughly.
Roast for 8 - 10 minutes and do NOT overcook; the shrimp will continue to cook when they come out of the oven. Let the shrimp cool and serve either slightly warm or at room temperature with a good cocktail sauce. You may also choose to serve the shrimp cold; they are equally tasty.
