- 1 large (4 lb.) butternut squash, peeled, seeded, and cut into 1" dice
- 3 tbsp. extra virgin olive oil
- 1 tbsp. minced fresh thyme
- 2 tsp. kosher salt
- 1 tsp. freshly ground black pepper

Preheat the oven to 400 degrees.
Place the squash on a sheet pan. Drizzle the oil over, then the salt and pepper. Use your hands to toss everything together, making sure all the squash is evenly coated. Roast for 30 - 40 minutes and toss once during cooking with a spatula to ensure even browning. Season to taste (if needed) and serve hot.
