Roasted Butternut Squash

This is a very simple, tasty and healthy side dish that can accompany a variety of main courses. Olive oil, salt, pepper and fresh thyme transform butternut squash into a highly appetizing dish. Give yourself enough time to make this, as it takes a half hour or more in the oven - the end result is more than worth the wait. This highly nutritious side dish is also naturally gluten and dairy-free, so feel safe in serving it to everyone, regardless of dietary restrictions.

Ingredients[]

  • 1 large (4 lb.) butternut squash, peeled, seeded, and cut into 1" dice
  • 3 tbsp. extra virgin olive oil
  • 1 tbsp. minced fresh thyme
  • 2 tsp. kosher salt
  • 1 tsp. freshly ground black pepper

Directions[]

Preheat the oven to 400 degrees.

Place the squash on a sheet pan. Drizzle the oil over, then the salt and pepper. Use your hands to toss everything together, making sure all the squash is evenly coated. Roast for 30 - 40 minutes and toss once during cooking with a spatula to ensure even browning. Season to taste (if needed) and serve hot.
