Noodle and Cheese Casserole

Cheese is usually forbidden in most healthy diets but a few smart choices means you can enjoy cheese in moderation. Comfort food also does not necessarily mean high fat or high cholesterol, either. Simple substitutions can make this delicious casserole great for your whole family - and they will never know it's mostly good for them! A small ingredients list also means this meal can be made on a frequent basis and not break the bank.

Ingredients[]

  • 1 lb. lean ground turkey (93/7 blend)
  • 1 large onion, chopped
  • 1 can Campbell's Healthy Request tomato soup
  • 1 can no salt added kernel corn, drained
  • 1 cup uncooked elbow macaroni noodles
  • 1 tsp. kosher salt
  • 1/8 tsp. freshly ground black pepper
  • 1 tsp. reduced sodium Worcestershire sauce (recommended - Lea and Perrin's)
  • Reduced fat cheddar cheese, shredded

Directions[]

Brown the meat and the onion together, draining off any residual fat if necessary. Add the tomato soup, half a can of water and stir to blend thoroughly. Let cook on a low simmer while the noodles are prepared. Cook the macaroni according to package directions.

Drain the noodles and add to the meat mixture. Add the corn and seasonings and mix well.

Layer the meat mixture and cheese in a large casserole dish, starting with the meat. Keep layering and make sure the last layer is a cheese topping. Put a lid on the casserole dish (or cover with aluminum foil if there is no lid) and bake at 350 degrees for 45 minutes.

Let sit for 5 - 10 minutes before serving.

If you want, serve a small green salad as a side and follow up the meal with a light, palate-cleansing dessert.
