This easy dessert tastes good at any time of year. You can use canned peach halves if fresh nectarines or peaches are out of season. If you can't find star anise, you can use ground cloves or allspice as an alternative.
Ingredients[]
- 4 ripe nectarines or peaches
- 1 tbsp. light brown sugar
- ½ cup low fat or fat free ricotta cheese
- ½ tsp. ground star anise, to decorate
Directions[]
Cut the nectarines, or peaches, in half and remove the pits. Do this carefully with a sharp knife and a steady hand.
Arrange the nectarines or peaches, cut-side upwards, in a wide flameproof dish or on a baking sheet.
Place the ricotta cheese into a small mixing bowl. Stir the light brown sugar into the cheese. Using a teaspoon, spoon equal amounts of the mixture into the hollow of each nectarine or peach half.
Sprinkle with the star anise. Cook under a moderately hot broiler for 6 - 8 minutes, or until the nectarines or peaches are hot. Serve warm.
