Meat Loaf

Meat loaf has gotten a bad rap, and needlessly so. When made properly with good quality ingredients, it is rich, flavorful, moist and not overly fatty. This recipe is a representation of a meat loaf makeover, using supreme lean ground beef in favor of ground chuck and for flavor and moistness, ground pork. Fresh onion and green pepper add flavor, texture and additional moistness. Simple seasonings make for an even simpler meal. Serve with mashed potatoes or any other side you traditionally like to serve with a meat-based dish. Steamed or sautéed vegetables are always a good, healthy choice.


  • 1 lb. supreme lean ground beef (93/7)
  • 1 lb. ground pork
  • 2 eggs
  • 1 package Lipton Onion Soup Mix
  • 3/4 cup plain whole grain bread crumbs (Recommendation - Gia Russa)
  • 1/2 a chopped onion (or more, to taste)
  • 1 large green pepper, finely chopped
  • 6 to 8 stalks celery, finely chopped
  • Ketchup, for brushing (optional)
  • Bacon slices, for layering (optional)


Combine all the ingredients in a very large bowl. Use your hands to mix it up and make sure it's well-blended. You can also do this in the bowl of a stand mixer fitted with the paddle attachment, but you run the risk of over-blending and making it tough.

Form the mixture into two loaves. If desired, brush ketchup on top and layer with a few slices of bacon. Place the loaves in two small, shallow pans and bake, uncovered, at 350 degrees for 1 1/2 to 2 hours.

Slice and serve hot with your favorite sides and serve extra ketchup for dipping!
