Description[]
Instead of using ice cream as a palate cleanser, give this refreshing and healthy version of sorbet a try. Rich in vitamin A and C from fresh mango and lime juice, this tasty treat pairs nicely with particularly rich or strongly flavored meals. Since the inactive time on this is 7 hours, give yourself plenty of time to make this if you are going to be serving it for a special dinner or a casual dinner party.
Ingredients[]
- 3 cups coarsely chopped, peeled fresh mango (around 4 mangoes)
- 1 1/2 cups water
- 1/2 cup freshly squeezed lime juice
- 1 cup sugar (or 24 packets Truvia)
- 2 tsp. grated orange rind
Directions[]
Combine all the ingredients in a blender or food processor. Process until smooth. You may need to do this in two batches.
Press the mango mixture through a fine sieve over a bowl, discarding any remaining solids. Pour the mixture into an 8" square baking dish. Cover and freeze for 4 hours, or until firm. Scrape the mixture back into the food processor and process until slushy. Freeze for 3 hours. Soften slightly in the refrigerator for 30 minutes before serving.
Scoop into small dishes and wait for compliments.
