The title of this recipe is a bit deceiving...these aren't patties, really, unless you feel like pounding the chicken into paillards, which is totally optional. These are breaded with a simple but flavorful combination of golden onion soup mix, ground mustard and freshly grated Parmesan cheese. Even the pickiest eaters would have a hard time saying no to these. Serve with any side of your choice, such as French fries, mashed potatoes, mac 'n cheese or steamed vegetables.

- 1 envelope Lipton Golden Onion Soup Mix
- 3/4 cup plain dry breadcrumbs
- 1/4 cup freshly grated Parmesan
- 1 tsp. ground mustard
- 1/4 cup flour
- 1 1/2 lb. boneless skinless chicken breasts (around 4 breasts)
- 2 eggs, slightly beaten
Directions[]
Preheat the oven to 350 degrees.
Combine the soup mix, breadcrumbs, Parmesan and ground mustard. Coat the chicken in flour and shake off the excess. Dip the chicken in the eggs, then into the breadcrumb mixture, making sure the chicken is thoroughly coated.
Place in a lightly greased shallow baking pan or on a lightly greased cookie sheet.
Bake, turning once, 25 - 30 minutes or until done.
