Fragrant Lemongrass and Ginger Pork Patties

Everyone knows that normally, burgers are made of beef, and in recent years, poultry. Here is a unique recipe featuring several interesting ingredients that combine to form a surprisingly flavorful burger that takes on the taste of a cooked pork breakfast sausage. Fresh lemongrass and ginger give the burgers a great little zing. Serve them on burgers with lettuce and slices of tomato with a splash of chili sauce, or serve them the way I did, without the buns to cut out carbs. Cooked brown rice is a particularly good side dish with these burgers, but feel free to serve any sides of your choice. This recipe would make excellent sliders for any casual party!

Gently bruise the lemongrass using the back of a knife. Remove the tough outer leaves and any pieces of stem that may remain. Chop the lemongrass as finely as possible.

Put the ground pork in a bowl and add the lemongrass, grated ginger, salt and pepper, to taste. Use your hands to blend everything together well. Form the mixture into four patties. Put them in the refrigerator for 20 minutes to rest.

When ready to cook, heat 1 - 2 tbsp. oil in a large skillet over medium heat. Gently cook the patties for 3 - 4 minutes per side, or until cooked through. Serve immediately with sides of your choice.
