This is a great hot weather, healthy coleslaw. The fruit makes it very refreshing. Nice and crunchy and sweet and tangy!

  1. Chop veggies (cabbage, apple, celery, red onion) and mix into a bowl.
  2. Add dried cranberries.
  3. Mix dressing in a separate bowl (oil, vinegar, mustard, salt and pepper).
  4. Pour dressing over chopped veggies and marinate for at least 2 hrs in a refrigerator.
