Soups and stews are One pot dishes and these have several advantages. If a home made soup or stew is eaten at once after making it all the vitamins, minerals and other goodness in the food used is eaten. Nothing is poured away with cooking water. Also soups and stews are relatively quick to prepare and there is not too much to wash up afterwards. This matters for busy people who want to eat healthily but have relatively little time to cook. It also matters for invalids who need to eat healthily but find too much time working in a kitchen tiring.
