This simple dressing can be used as a tasty addition for many different recipes. Including the Avocado Salad.
- First, rinse and drain basil leaves. Then, blanch basil leaves for 2-5 seconds in boiling salted water; shock immediately in ice bath for several minutes (until cool); squeeze out excess water.
- In a food processor or blender, mix basil and 1/2 cup olive oil until it is a smooth paste; then add remaining 1/2 cup olive oil and stir well.
- Using a fine wire strainer layered with cheesecloth, pour oil mixture through strainer into small bowl. Gently press basil to release remaining oil. Discard basil when finished.
- Cover and chill, let return to room temperature before using. Will hold refrigerated up to 2 weeks.
