Baking soda is the cooking term for sodium bicarbonate, a fine powder with a slightly salty, alkaline taste. Baking soda is primarily used in baking where it reacts with other components to release carbon dioxide, which helps dough rise.

Many vegan baked goods recipes feature baking soda along with the addition of vinegar; when combined, the baking soda and vinegar provide the lift to the baked product in the absence of eggs, which help to provide texture and lift in standard recipes.
